dedicated to producing natural, organic wines for generations.
Our vineyards, spread across 20 hectares within 135 hectares of meadows and forests,
thrive in ideal soil and sun conditions, enhancing both biodiversity and grape quality.
Since 1998, we’ve been committed to 100% organic cultivation,
allowing us to produce healthy, natural grapes with minimal intervention.
Each vineyard is treated as its own ecosystem,
ensuring vibrant, dynamic soil and strong vines.
Castello di Stefanago’s winemaking method focuses on understanding each vintage
and guiding the grapes to become the best expression of that year.
Timing is crucial, especially in the hand-harvesting of different grape varieties.
Each year, we create a plan to make the most of what nature provides,
ensuring we produce the highest quality wines.
This process is a collaboration with nature, based on careful observation and timing.
As a result, our wines often vary slightly from year to year,
which we believe is the essence of natural winemaking.
Some of our wines are easy-drinking,
fresh wines that are enjoyable and approachable soon after bottling.
While simple in taste, they require great expertise to produce.
In addition to these, we produce more complex wines that undergo long refinement,
such as our exclusive Pinot Noir Campo Castagna or our unique Riesling San Rocco.
Our sparkling wines, made using the ancestral method with Pinot Noir,
spend years on the lees with native yeasts before being disgorged.
The result is a deep and complex sparkling wine, where time and vintage
harmonize to create a truly unique expression.
